How do I fuel my day?

I start my day with a cup of Mushroom Hot Drink (Mega Mushroom Powder) with dash of coconut sugar and a splash of almond milk. I either have homemade vegan yogurt with granola or overnight oats with fresh blueberries.

I gave up coffee over 3 years ago. I became a vegan in 2019, I was a pescatarian for years before that.

Lunch is almost always a salad! I am a creature of habit and salads are just so easy and can include losts of yummies.

Not a big sandwich fan. Though I will have vegan scrambled eggs and vegan bacon fro time to time for lunch because I love them also.

Salad with leftovers from dinner last night- cleaning the fridge out! But super yummy!

Dinner is the big meal of the day, I usually eat around 4-4:30 pm because I have to leave home at 5:30 to go teach. Sometimes I make a pot of Cuban Black Bean Soup or Vegan Fried Rice with Veggies and Tofu to last a few days.

Shells with mushrooms and spinach with Vegan Feta Sauce- a favorite!

What do I drink during the day? Water with electrolytes, water with lemon, sparkling water with flavors. When I teach at the colleges I might take a cola for the sugar boost but I could very easily drink too many in a day so I use it was a weekly treat :( I do need to break this habit.

How do you fuel your day? It is interesting to hear about peoples food habits.

Kim Steinmuller Joy has been a stained glass artist and teacher since 1982. Most of her pieces are in the traditional style and starting to experiment to incorporate materials not usually found in the medium. She believes that through her pieces she can grow and learn more about the world around her and where she came from.
